Hi there! My name is Beka (like Becca, but better). I’ve got two degrees, mountains of student loans, and something called Glycogen Storage Disease Type VII. I’m the brains and the belly behind Slow Carb Snacktime. I started this blog as a way to stay motivated and share all the adventures of my slow carb turned paleo/Whole30 journey, but I never thought it would grow this much (or that I’d stick with it for so many years). I am not a professional chef, but I do love to eat and I especially love not feeling sick all the time. If you are ready for a lifestyle change or are battling a chronic illness, this might just be the place for you.

  1. Found your blog through reddit. Both my boyfriend and I have struggled with weight our entire lives, and we’re serious about making a change. Starting SCD next week (starting as I’m about to leave to a beach vacay tomorrow will not be good) and I’m looking forward to the journey so many people like yourself have triumphed.
