It’s finally Cheat Day! Waiting 10 days has been great for weigh-ins, but oh the cravings! …I may have had Gushers and Toaster Strudel for breakfast (and will pay for that later), but the next treat for the day is homemade popcorn!
I’ve always created and written up my own recipes, but today I’m testing out Grandma’s Organic Popcorn from NYC food blogger Olivia over at Confessions of a Hungry White Girl. 1/4 cup coconut oil (ghee is fine too)
1/4 cup organic popcorn kernels
2 tsp nutritional yeast
Heat coconut oil in a large pot over medium heat until melted. Add popcorn kernels, sprinkle with a pinch of salt, and cover with lid. Let kernels pop for 4-5 minutes or until popping slows – listening carefully to avoid burning.
Remove popcorn from stove. Toss with 2 tsp of nutritional yeast, finish with freshly cracked salt, and dig in!
