Ch-Ch-Ch-Chia! Pudding Party

One of the new big obsessions in our house right now is chia seed. For once, this is a totally acceptable craving since chia seeds are packed with protein, fiber, and Omega-3 fatty acids. Mostly this is The Boyfriend’s obsession, personally I could do without, but he’s in love and I’m a sweetheart so I started experimenting with recipes for him. Here are a few super speedy combos for making chia seed pudding, a great treat for breakfast or dessert. These portions are sized for one large serving or two small servings, adjust proportions accordingly.

Almond-Coconut Chia Seed Pudding 
Ingredients: 
3 tbsp chia seeds
1/2 cup unsweetened coconut milk
1/2 tsp ground cinnamon
1/4 tsp almond extract

Add chia seeds to a small bowl. Using a small whisk or fork, mix in other ingredients. Be sure to stir thoroughly so the pudding doesn’t get all clumpy. Pour into desired serving dish and chill in the refrigerator for 10-15 minutes (up to 2 hours). Enjoy!

Protein Power-Up Chia Seed Pudding (Cookies ‘n’ Cream)
Ingredients: 
3 tbsp chia seeds
1/2 cup unsweetened coconut milk
2 tbsp protein powder (we’ve been using this stuff, but any flavor should do)

Add coconut milk and protein powder to a small bowl. Using a small whisk or fork, mix thoroughly and break up any protein powder clumps. Add chia seeds and mix again. Be sure to stir well so the pudding doesn’t get lumpy. Pour into desired serving dish and chill in the refrigerator for 10-15 minutes (up to 2 hours). Enjoy!
