Just as good as Butter Bean Puree, but small white beans seems to be easier to find than butter beans. Since they have a slightly different texture, I thought I’d add a slightly different recipe.
1 can small white beans, 2/3 of liquid drained
1 tsp. minced garlic
1 tbsp. olive oil
Seasoning: (to taste)
In a small pot or saucepan, combine all of the ingredients over medium-high heat. Stir occasionally until beans begin to soften, about 5-7 minutes. With a vegetable/potato masher, mash the beans just enough for them to break up and come together without liquefying. If mixture seems too dry, add 1 tsp. of olive oil at a time to reach desired consistency.
